Five food businesses were ordered to temporarily shut last month for breaking health and safety laws.
They included the Exchange Bar in Waterford City was one of five closed by the Food Safety Authority in January.
A report by the Food Safety Authority noted 'a grave and immediate danger' to public health.
"Evidence of rodent activity was found in the bar areas, posing a risk of contamination to foodstuffs, food preparation surfaces equipment and utensils."

The closure order was lifted on January 7th.
