I’m not the greatest cook in the world but since I’m getting older I figure I need to start now.
I’m moving away from fast food and takeaways with the hopes of fitting more body friendly foods into my diet.
When I get in the kitchen I don’t want to spend hours and hours slaving over the stove but I still would like my food to be tasty. This easy quesadilla recipe is right up my street and I’m sure everyone will enjoy it.
It takes less than 40 minutes to prepare and make which means you can have a meal in no time. If you’re having friends over this is an easy meal to prepare for the whole gang.
The Strong Roots garlic roasted sweet potatoes that I’ve used in this recipe adds a really delicious sweet taste to the Quesadillas and you can find them in your freezer isle in your local supermarket.
If you know your veggies then you’ll know this one is considered a super veg, it’s full fiber which is good for digestion and complex carbs which is great for slowly releasing energy.
Here’s all you need to create my yummy Strong Roots Sweet Potato & Chorizo Quesadillas.

Strong Roots Garlic Roasted Sweet Potato Cubes
Ingredients:
Bag of Strong Roots Garlic Roasted Sweet Potato Cubes
Small bunch coriander, chopped
200g block feta cheese, crumbled
8 flour tortilla
140g sliced chorizo
110g Spinach - chopped
Directions
1. Pre-Heat oven
2. Cook Strong Roots Garlic Roasted Sweet Potato Cubes according to package instructions.
3. Remove from oven and leave to cool slightly
4. Drop a couple of the Sweet Potato Cubes over half of each tortilla, top with chorizo slices, chopped spinach and crumbled feta and fold the other side over.
5. Cook on the hot griddle pan for 3 mins each side until golden
6. Cut each tortilla in half and serve with some delicious with some Strong Roots Sweet Potato Fries
